We are now well and truly into the middle of winter. While most of the days are still filled with glorious sunshine, the nights are fresh and crisp with a little cold nip to them…well actually it is a lot nippier if you are in the Canberra Region.

Slow cooked turkey legs in rich tomato sauce.
Serves 4
Ingredients
4 turkey legs
Half an onion diced
4 garlic cloves crushed
1 large carrot diced
2 medium sticks of celery sliced thinly or to your liking
2 tins of whole tomatoes
½ cup of white wine.
Method
- Heat a large saucepan on medium heat with 2 tablespoons of olive oil.
- Sautee onions and garlic until slightly softened. Throw in the carrots and celery and cook until slightly soft. Add salt and pepper to taste.
- Salt and pepper the turkey legs.
- Put the saucepan on high heat, and slightly brown the turkey legs, keep turning until all sides are sealed and lightly browned.
- Add in ½ of white wine and cook off.
- Throw in 2 tins of tomatoes in the pan. Using a wooden spoon, spread it out over the turkey legs and slightly break down the tomatoes (do not worry if they are still whole, as you cook the turkey legs the tomatoes will gradually break down). Half fill the tins with water and tip into the saucepan to wash out.
- Bring the sauce to the boil, then place the heat on low and simmer on the stove slowly for 4 hours, or until meat is falling off the bone.
- To garnish or mix in, roughly chop a handful of basil or parsley leaves, to your liking.
This dish is perfectly accompanied by brussel sprouts and a creamy mashed potato and best enjoyed on a chilly winters evening with the family or when entertaining friends in your new home.
