Christmas is that time of year where traditions are made with family and friends and enjoyed time and time again. In my family, making my own gingerbread is something that I’ve made a tradition for the past 7 years. Christmas is the only time of year it is made, and I love seeing the excitement and happiness on my loved ones faces when I tell them it’s time to bake.

Here is my recipe, and perhaps it can be a tradition you can start in your family.

Ingredients

3 ¾ cups of plain flour

¾ cup of brown sugar firmly packed

1 ½ teaspoons of bicarbonate soda or baking powder

3 teaspoons of ground ginger

1 ½ teaspoons of ground cinnamon

¼ teaspoon of ground cloves

150g of chopped unsalted butter

½ cup of golden syrup

1 egg

1 table spoon of milk

1 pack of icing writing gel

Method 

  1. Into a large bowl sift flour, bicarbonate soda or baking powder, ginger, cinnamon and cloves. Add brown sugar and stir.
  2. Add chopped butter to the flour mixture. Using your fingertips, combine the flour mixture and the chopped butter until the mixture resembles breadcrumbs
  3. Lightly whisk together in a separate jug the golden syrup, milk and egg. Add the liquid to the mixture and combine so it comes together.
  4. Turn dough out onto a lightly floured surface and knead until dough is smooth.
  5. Separate dough into three round discs and refrigerate for 30 minutes.
  6. Preheat oven to 160 degrees fan forced.
  7. Roll out discs between two pieces of baking paper until approx. 5 mm thick.
  8. Use your gingerbread man cut outs, or another cut out of your choice to make your biscuit pieces.
  9. Place onto a baking tray approx. 1cm apart.
  10. Bake in the oven for approx. 12-15 minutes or until golden- be careful not to overcook.
  11. Cool in tray for 10 minutes then transfer onto a wire rack to completely cool.
  12. Once completely cool, use icing writing gel to decorate.
